When we are providing the change in cooling capacity how should we enumerate this value? Are we supposed to be using the formula Q=mcT?

Cooling capacity is in units of kW.

You'll get the cooling capacity by calculating the heat addition (during the evaporator stage) of the cycle.

Qe = m_dot*(h1-h4)

Don't worry about using specific heats here, just use your enthalpy values from the thermodynamic tables.
